Mini Grasshopper Pies



With my older children back in school this week, I've had more time to focus on a middle child who sometimes gets lost in the crowd. My daughter loves to help me cook, so I enlisted her help to make dessert for our dinner exchange. It was a fun afternoon! Since it's been so hot lately, a cool grasshopper pie sounded good. We decided individual pies would be cuter than a big pie.




Ingredients needed are:

Oreo cookies
Butter
Marshmallow Creme
Cool Whip
Peppermint Extract
Green food color (not pictured)




To make the crust, pulse up the Oreos in a food processor until they become small crumbs. Reserve 2 Tbsp. of the crumbs for a garnish, and then add melted butter while the crumbs are processing.



To make cute individual pies, put cupcake liners in a cupcake pan and then scoop the crust mixture into the cups. I used the bowl of my scoop to press the crust into the bottom and up the sides of the cup.



We were able to get 17 cups full of crust, but I expect that if we refrain from snitching next time, we could probably get 18 cups. I left these at room temperature as I was making the filling, but next time I'll put them in the freezer until they're slightly frozen to keep them from getting crumbs in the filling.



To make the filling, simply whip the marshmallow creme, peppermint extract, and food coloring together. Then fold in the cool whip until all is combined and scoop into the prepared cups.



Smooth the filling out to the edges of the crust. This was the part where it would have been easier if my crust had already been frozen, since the crumbs adhered to the sticky filling.



Sprinkle the reserved crushed cookies over the tops of the pies and freeze for several hours, or overnight.



When you're ready to serve, remove the pies from the cupcake cups and gently peel the paper liner away from the crust. Garnish with a sprig of fresh mint.



Mini Grasshopper Pies
Crust:
1 package (39 cookies) Oreo chocolate cookies
1/2 c. melted butter

Filling:
1 tub (7 oz. or so) Marshmallow Creme
1 tsp. peppermint extract (can add more if a stronger flavor is desired)
4-5 drops green food coloring
1 tub (2 cups or so) Cool Whip
