Now, nobody at church is going to judge you for your flat cookies, and if they do, you didn't want to be their friend anyway, and it's probably more important to be on time for the meeting than to show up with presentable cookies, but I'd had one of those days where nothing went right, and my emotions were haywire, and I knew I'd rather stay home altogether than take ugly cookies. I know this is not the proper attitude, but we all have our moments. So I whipped out my double boiler and melted some chocolate chips, that's it, just plain chocolate chips. There was no time to mix up frosting or ganache. Then I slathered melted chocolate on a cookie, stuck another one on top, and voila, cookie sandwich! My sad, flat little cookies were transformed! The chocolatey-ness really worked with the ginger, too. I proudly took my plate of cookies to church, twenty minutes late, and enjoyed the evening for what it was supposed to be about, sisterhood and inspiration. By the end of the evening I once again had a firm grasp on all the things that are more important than picture perfect baked goods. Thank goodness.
